Ingredients
- 500g bihon rice noodles
- 600g chicken thigh fillet, chopped into small pieces
- 4 pcs chicken liver, thinly sliced
- 2 pcs medium size carrots, sliced into strips
- 1.5 cups chopped cabbage
- 2 pcs chopped onions
- 1 head chopped garlic
- 1 tsp salt and ground black pepper
- 6 Tbsp soy sauce
- 6 Tbsp oyster sauce
- 7 cups water
- Cooking oil
- 1-2 Calamansi
Instructions
- Heat a wok over medium with some cooking oil. Add carrots and stir fry until slightly toasted. Take out and set aside.
- In the same wok, sauté onion and garlic for about 30 seconds until fragrant.
- Add chicken in and keep sautéeing for 3-5 minutes. Season with salt and pepper to taste.
- Add soy sauce, oyster sauce. Turn the heat to high and keep cooking.
- Add chicken liver. Keep stirring until the sauce is reduced.
- Pour in water. Slow cook for about 5 minutes until everything is cooked through.
- Fish all the toppings out of the wok. Then add Bihon noodles.
- Turn the heat to medium-low, and cook until the Pancit Bihon noodles are softened and absorbed all the broth.
- Add carrots and cabbage, and stir-fry them well with noodles for 2-3 minutes. Turn off the heat and mix well for 2-3 more minutes.
