INGREDIENTS:
*For the Casserole:
- 1 lb fresh tuna fillet, room temp.
- 1 lb pasta (cavatappi or fusilli)
- 5 tbsp oil
- 4 cups mushrooms, sliced
- 1 tbsp unsalted butter
- 1 shallot, peeled and small diced
- 2 cloves garlic, finely minced
- 2 ribs of celery, small diced
- ½ cup white wine
- 3 tbsp all-purpose flour
- 4 cups whole milk
- 1 tbsp fresh thyme, minced
- juice of ½ lemon
- 1 cup peas
- 1 cup yellow cheddar, shredded
- 1 cup white cheddar, shredded
- salt and pepper to taste
*For the Breadcrumb Topping
- 1 cup breadcrumbs
- ¼ cup unsalted melted butter
- ¼ cup yellow cheddar, shredded
- ¼ cup white cheddar, shredded
DIRECTIONS:
- Heat the oil in a pot over high heat.
- Add mushrooms and cook for about 2-3 minutes until cooked and softened. Stir occasionally.
- Turn the heat down to medium. Push the mushrooms to 1 side of the pot.
- Add shallot, garlic, and celery and sauté them for 3-4 minutes. Then mix them with the mushrooms and keep stirring until the liquid is almost gone.
- Add flour and mix it around to make a roux.
- Pour in the milk and whisk well. Turn the heat to medium-high and cook until the soup is thickened.
- Add thyme, and season with salt and pepper to taste. Mix well. Turn off the heat.
- Boil pasta in a big pot of water with some salt and cook for 7-8 minutes until al dente. Strain and run it through cold water to cool down.
- Season tuna fish fillet with salt and pepper on both sides.
