Vegetarian Potatoes and Egg Casserole Recipe
This is the ultimate guide to a wonderful egg casserole recipe. It’s a meatless dish, so I hope all vegetarian folks will also be able to enjoy this recipe.
My favorite combination is eggs and potatoes. I notice that a regular egg casserole is very low-carb. I choose potatoes because they help make this dish heartier and more comforting. You can switch up with any other type of vegetable if you like.
Let’s cook a delicious meal with potatoes and eggs together.

How to keep egg casserole from drying out?
Nothing’s worse than eating some dry egg casserole. The dish is supposed to be very soft and moist. And here are some tips to help always keep it from being dry.
1. You should always keep an eye on the casserole while cooking and watch the time to avoid overcooking it. Eggs are very sensitive; just a couple of extra minutes will completely change their texture.
2. If you are not confident with your judgment, go ahead and cover the casserole before putting it in the oven. The aluminum foil will trap the moisture inside and prevent the casserole from being overheated and burnt, especially the top layer.
3. In terms of ingredients, you can consider adding extra vegetables or dairy products such as milk and cheese to make the consistency thicker and creamier. However, make sure to sautee the veggies beforehand, otherwise they will make your egg casserole watery.
Health Benefits of Egg Casserole
Eggs are always a type of superfood that’s so healthy for everybody.
They are a clean source of protein and fat to help strengthen your muscles. They are low in calories but high in good nutrients like vitamins and minerals. If you don’t have any health problems, it’s recommended that you have 1 egg per day, according to the American Heart Association.
Besides eggs, two very important ingredients in this egg casserole recipe are milk/cream and cheese. This is another component that contains a large amount of good fats as well as calcium to help keep it strong.
If you add extra bacon, sausage, or ham to your egg casserole, it will not only help make the dish more delicious; it will also increase the proteins. However, do not put too much because they do have quite a lot of sodium.
Do not forget to add vegetables to the egg casserole. It’s a great way to provide fiber and vitamins to your body. I highly recommend spinach, mushroom, and bell peppers. They taste amazing, too!
