Tricks for Making Perfect Home Fries Every Time
The best potatoes to use for this quick and easy home fries recipe are russet because they have high starch content. Therefore after you fry them, the outside can get crunchier, and the inside will be softer and fluffier.
You can choose to peel the potatoes completely, but leaving the skin on is a better choice to achieve a crispy exterior. Just make sure to wash them well to get rid of dirt and dust.
To achieve a very nice golden color and prevent the potatoes from discoloration, soak them in cold water for about 20-30 minutes after cutting them. Potatoes are very easy to be oxidized and browned.
A tip for not only home fries but for all fried food in general: do double frying! That’s the secret to extra crispy potato fries.
Fry the potatoes in hot oil over medium-high to high heat. If the temperature is not hot enough, your home fries will become soggy and greasy.

The good news is you can make extra home fries and use for multiple times if you know how to store them properly.
After frying the potatoes, you need to let them cool completely before putting them in a container and leaving them in the fridge for up to 4 days.
Make sure to put a date on the container to keep track of the freshness.
When you want to reheat your home fries, simply pop them in the oven or air fryer for 10 minutes at 375ºF, and the fries will be as good as new. Good luck!
